We said we would eat more vegetables and go on a diet, but like any self-respecting diet you have to cut back! Also because then we get sad and this is not good for the spirit or the body, so we took all the tastiest things we had at home and we made a simple egg pasta with Caramelized Red Onions, Crispy Bacon and Sweet Gorgonzola… A few leaves of Sage to bind all the flavors and off to the table.
It’s prepared in the time it takes to cook the pasta and it’s really rich and delicious, with the creaminess and savoriness of the Gorgonzola, the sweetness of the Tropea onion caramelized in honey and to top it all off these crispy bacon nuggets that give it an incredible flavor booster.

Ingredients:
- 200 gr Pappardelle / Egg pasta of your choice
- 1 Tropea Onion
- 75 gr Smoked Bacon
- 100-150 gr. sweet Gorgonzola
- 1 Sage leaves
- Evo oil
- 1 teaspoon of honey
- Salt&Pepper
Procedure:
- Heat a drizzle of oil in a large skillet and cook the onion and rounds over low heat for about 10 min, add a pinch of salt and a teaspoon of honey. Cook another 5 min until the onion is very mordida and add a small leaf of sage, turn off and put the onion in a cup.
- In the same pan brown the bacon for 10 min or until it is nice and crispy. Meanwhile, throw the pasta into boiling salted water.
- Take the bacon out of the pan and dry it lightly on absorbent paper.
- In the same pan, melt the gorgonzola cheese (I didn’t even turn on the heat because the pan was still hot) and when the pasta is cooked, drain it in the pan with the gorgonzola cheese and stir, letting the gorgonzola cream join the pasta, if necessary add a little cooking water.
- Serve with a spoonful of Caramelized Tropea Onion, a spoonful of Crispy Bacon and a sprinkling of Pepper!
We only used 2 pots: one for the toppings and one for the pasta, so it’s an eco-friendly pasta! 😉
